- Oven-Roasted Potatoes

- I cut my potatoes in one-inch cubes and parboil (10 minutes maybe?).
- This makes them more tender and baking time is less (so they dry out
- less). Drain well.

- Melt several tablespoons of margerine on a cookie sheet (with "edges).
- Add spices and mix in (I use 1 teaspoon each of garlic powder, onion
- powder, salt, pepper and 1 tablespoon of parsley).

- Add potatoes and, using spatula, turn to coat.

- I bake at 400 degrees F for about 10 minutes, turn and bake a little
- more.
